Baked Italian Salmon

Ingredients
  • X4 salmon fillets (150g-200g each)
  • 2 tablespoons (40ml) extra virgin olive oil
  • 2 garlic cloves, sliced
  • 1 tablespoon salted capers, rinsed and drained, finely chopped
  • 1 teaspoon dried oregano
  • 1 tablespoon flat-leaf parsley, finely chopped
  • 300g cherry tomatoes, halved
  • Sea salt, to taste

How to Make It
Step 1

Preheat the oven to 200°C conventional oven/ 180°C fan-forced (400° Fahrenheit/Gas 6). Line a large shallow baking tray with baking paper.

Step 2

Place the salmon in the prepared baking tray and rub olive oil over the fish.

Step 3

Rub the chopped garlic, capers, oregano and chopped parsley into the fish. Arrange the tomatoes, around the salmon. Season with salt to taste.

Step 4

Bake for 20 minutes or until the fish is cooked to your liking.

Step 5

Transfer Baked Italian Salmon to a serving plate. Top with the baked cherry tomatoes before serving – buon appetito!
